Walnut Eggnog Cake
Ingredients
»3 sticks unsalted butter at room temperature
»2 cups sugar
»6 eggs, separated
»2/3 cup milk
»1/2 cup cognac or brandy
»1 teaspoon vanilla
»2 cups unbleached flour
»2 cups whole-wheat flour
»1 teaspoon cream of tartar
»2 cups broken walnut pieces
»confectioners sugar for garnish
1. Preheat oven to 275 F. Grease and flour a deep 10-inch tube pan.
2. Cream butter and sugar.
3. Beat in egg yolks. combine milk, cognac, and vanilla.
4. Combine flour to butter mixture alternately with liquid.
5. Beat egg whites with cream of tartar until almost stiff.
6. Add walnuts to batter, then fold in beaten egg whites.
7. Pour into prepared pan.
8. Bake 2/1/4 hours. Cool upright for 30 minutes, invert, and cool 1 hour longer. Decorate with confectioners sugar.
